Guilt-Free Clam Chowder

Kid Friendly, healthy and delicious winter clam chowder
 Ingredients:
    2 slices of Uncured Turkey Bacon
    1/2 teaspoon of Ground Cumin
    1/2 teaspoon of Mrs. Dash Italian Medley All Natural Salt Free Seasoning Blend
    1/2 teaspoon  of Organic Fenugreek Seed Powder
    2 Bay leaves
    1 medium cut into florets whole cauliflower
    4 (6.5 ounce) cans of Minced Clams
    1 cup of water
    1/2 cup of Rich and Creamy Fat-Free Half & Half
    2 tablespoons of minced fresh parsley (optional)   
    Sea Salt
Directions:
1. Steam cauliflower. Bring about 1/4 inch of water to a boil in a large frying pan. Add about 1/2 teaspoon fine sea salt and trimmed and cleaned cauliflower florets. Cover and steam for up to 8 minutes for completely cooked, soft florets.
2. Set 1/4 of cauliflower florets to the side.
3. Mash 3/4 of cooked cauliflower with potato masher.
4. Transfer mashed cauliflower to to the large soup pot and whisk in minced clams  and a  cup of water and all the seasonings. Bring to a simmer. Reduce heat; continue to simmer for about 5 minutes on low heat.
5. Stir in cooked cauliflower florets that were set aside and turn off the heat.
6. In the oven or dutch oven bake Turkey bacon until bacon crisps on both sides, about 5-7 minutes. Remove Turkey bacon, set aside.
7. Serve hot in a soup bowl, garnish each bowl with reserved cut into small short strips bacon and minced fresh parsley.
