Asian Inspired Philly Smoked Salmon Hors D'oeuvres

Delicious and Fancy looking appetizer.

Recipe was adapted from Trader Joe's website.

Ingredients

    1 tub TJ's Whipped Cream Cheese
    1 package TJ's Smoked Sockeye Salmon
    1 package TJ's Roasted Seaweed Snacks
    1 bag TJ's Savory Thin Rice Crackers
    1 bunch TJ's Green Onions (green sections only)
    1/4 teaspoon TJ's Ground Black Pepper, or to taste
    You will also need 20 wooden toothpicks


Directions

Using a clean dish cloth, wrap 10 to 15 Savory Thin Rice Crackers. Alternatively you can use a resealable plastic bag. Cover and smash into tiny pieces. Wash and clean green onions then cut into 2" sections. Lay one slice of smoked salmon on top of one slice of seaweed. Spread a thin layer of cream cheese on top of the salmon. Sprinkle with rice cracker bits and season with freshly cracked black pepper. Top with one green onion section. Roll into a tight roll with the seaweed side being on the outside and the cream cheese side on the inside.  Serve immediately as the rice crackers will get soggy if left out for too long.

Cranberry Endives

Healthy and delicious appetizer for a family gathering, holiday or a weekday

Ingredients

 1 pkg Red & White Belgian Endives
 1 log TJ's Cranberry Chevre, softened to room temperature
 1 pkg Raw Sliced Almonds


Directions


Separate whole endive leaves from the base, rinse and pat dry. Spread cheese evenly on the individual endive leaves, then sprinkle with sliced almonds for garnish and a little crunch.

Guilt-Free Clam Chowder

Kid Friendly, healthy and delicious winter clam chowder
 Ingredients:
    2 slices of Uncured Turkey Bacon
    1/2 teaspoon of Ground Cumin
    1/2 teaspoon of Mrs. Dash Italian Medley All Natural Salt Free Seasoning Blend
    1/2 teaspoon  of Organic Fenugreek Seed Powder
    2 Bay leaves
    1 medium cut into florets whole cauliflower
    4 (6.5 ounce) cans of Minced Clams
    1 cup of water
    1/2 cup of Rich and Creamy Fat-Free Half & Half
    2 tablespoons of minced fresh parsley (optional)   
    Sea Salt

Haddock and Shrimp "Cakes"

Amazingly healthy and delicious haddock and shrimp cakes that would satisfy a connoisseur seafood lover

Ingredients:
2 fillets of fresh wild caught haddock
10 pieces of medium cooked shrimp, tails removed
3 scallions finely chopped
1/2 cup finely chopped bell pepper
2  full teaspoons fulls of  Grapeseed Veganaise Dressing and Sandwich Spread or  mayonnaise
1/2 cup corn kernels
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon salt
Gluten Free breadcrumbs, for dusting 
Grapeseed Oil Spray
Favorite dipping sauce, for serving

Pan-seared Sea Scallops over Zucchini Pasta with Goat Cheese and blanched almonds



Ingredients

10-15  sea scallops
Coconut oil
4 medium-sized zucchini
3-4 garlic cloves, finely chopped
2 tablespoons ghee
1/4 cup vegetable or chicken stock
Juice from 1/2 lemon
6 oz soft, fresh goat cheese
Salt to taste
2 teaspoons blanched almonds
