Fresh Vegetable Salad with Salmon Lox and Burrata Cheese


Burrata is a fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. (Source: Wikipedia)

Ingredients:
1 Avocado
Salmon Lox
10-12 Baby Tomatoes
1 bag of fresh Baby Spinach
Burrata Cheese
2 tablespoons of Lemon Juice
Balsamic Glaze
Salt to taste 

Directions:
Wash all vegetables well. Place baby spinach in a salad bowl. Cut avocado lengthwise into small-to-medium pieces. Cut lox slices in half. In a separate large bowl mix avocado, lox slices and baby tomatoes, mix the ingredients, season with salt and place them on the top of baby spinach. Cut Buratta cheese in four pieces and place it on top of the salad so that the cream part of Burrata cheese faces down. Dress salad with lemon Juice and balsamic glaze.
