Salad with Pomegranate seeds and Cranberry-Gorgonzola-Walnut Dressing


If you are in the mood for a light and fruity taste, this salad is exactly what you need and can be done in minutes.

Ingredients: 
3 cups of spinach
1 cup of cherry tomatoes
2 Israeli cucumbers
Seeds from ½ of a large pomegranate
1 large ball of Burrata cheese
Directions:
Place burrata cheese in the center of the plate. Thoroughly wash spinach and arrange it on a plate. Place cherry tomatoes on top of the spinach and then add pomegranate seeds. Wash, peel and cut cucumbers into circles or any other shape of your choice and arrange it on your plate.

Cranberry-Gorgonzola-Walnut Dressing
Ingredients:
3 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
2 teaspoons of crumbled Gorgonzola cheese
3 teaspoons of dried cranberries
2 teaspoons of walnuts
Directions:
Combine all the ingredients for the dressing, add them to a blender and blend them to desired consistency. Dress salad with homemade dressing.
